Baked Apple Cinnamon Chips


I had a bunch of mediocre-tasting apples to use up before I left California, so I decided to try making homemade apple chips.  I used 4 small apples.  First, I cored them, and then I made pretty designs (stars and hearts) in the center of each slice, sprinkled them with cinnamon, and baked them at 220 degrees for 2 hours.  They turned out wonderfully, and they will be a great healthy snack to bring along on my road trip to Oregon State!  I also plan to make some during XC pre-camp; all I have to do is steal some apples and cinnamon from the Caf!ImageImageImageImageImage


Making an “Open-Faced Omelet” (Whoops, I forgot that omelets are supposed to be folded in half…)


This morning I was craving some protein, so I decided to make myself an omelet for breakfast!  Not too bad for my first attempt…

Crack 2 eggs, add salt and pepper:


Mix with a fork:


Chop up some veggies:



Top with feta cheese:

Half Marathon and Weekend in San Fran


Hi all!  My half marathon on Sunday went really well, and my time ended up being a lot better than I expected.  The weather was nice and cool, making for perfect racing conditions, and the course had some nice rolling hills that were a nice change from the completely flat landscape in Davis.  I wore my racing flats, which I think was a really good decision because they felt weightless compared to my usual training shoes.  This was the third half marathon that I’ve run, but the first to I did I had a friend to run with the whole time, so this was quite a different experience.  I started out with a pace group, but it felt kind of slow so I ended up breaking away from them after about a mile and a half.  I was nervous that I would go too fast in the beginning without a running buddy there to keep me in check, but it turned out fine in the end.  I guess it’s just a good idea to be flexible in your race plan and listen to your body.  I’ll post pictures of me racing soon!

San Francisco was an amazing city!  I actually didn’t get lost at all, despite having to navigate back and forth between my hotel and the Amtrak station and making the mile long walk to the main start line of the race in the very early morning hours.  I could totally see myself living there someday, especially in one of the beautiful Victorian-style houses that San Francisco is famous for.  I only wish that I could have had someone there with me to explore the city!

I ate some yummy food this past weekend too!  I didn’t take pictures of most of it though…I was just so darn hungry by the time I would sit down to eat that I usually finished my food before remembering to take a picture of it!  On Saturday my lunch was a yummy beet salad from the Plant Cafe on the Embarcadero.  Then for dinner that night I ended up just making some pasta at the hostel I was staying at rather than going out to eat (that way I could save some money and go to bed early to rest up for the race).  At the finish line of the race they gave us an insane amount of free food, including lots of mini Luna bars, coconut water, Jamba Juice smoothies, scones, bananas, and oranges.  I pretty much just snacked on that stuff all day, and then before I left that night I got some delicious frozen yogurt at the Ferry Building Marketplace on the Embarcadero.  I chose chocolate froyo with chocolate-covered expresso beans and strawberries.  So delicious!

Half Marathon in San Francisco this Weekend!


This weekend I’m heading to San Francisco to run my half marathon!  I’m really excited, but also kind of nervous.  I would really love to PR, but considering all the logistics I’ll have to deal with surrounding the big event, I won’t be too upset if I don’t run my best time.  I leave on an Amtrak train tomorrow morning and arrive in the city in the early afternoon.  Once I get there, I will have to find somewhere to eat lunch and then take a shuttle bus to the Race Expo to get my race bib and everything (there is no race day check-in) and then I will most likely take the shuttle back, walk to my hotel, check in there (or at least check my bag behind the counter) and then hopefully find some cool little shops and/or a museum to explore.  Following this (hopefully) relaxing/low-key day, I want to get pasta somewhere and then settle in for the night.  I have to get up early (before 6) and take a cab to the location of the 2nd half marathon shuttle bus which will drop me off at the start of the 2nd half marathon.  Once I get there, I have to check my bag, and then it’s RACE TIME (it starts at 8:30 a.m. and I’m in the 2nd wave)!!  After the race, I have to somehow find my checked bag amid the thousands of others, and then catch the Amtrak back to Davis that evening.  Needless to say the logistics of this whole enterprise are a bit complicated, and if I finish around 1 hour and 40 minutes (my time from last summer) I will be pretty satisfied.  However, if I broke 1:40 I would be ecstatic (especially with those famous San Francisco hills)!!!  I’m thinking of wearing buns for the race, but I haven’t decided for sure yet.  If I were to wear them, I think it would definitely help me channel some of my inner Ole strength and attack those massive hills!  I also think I’ll wear my New Balance racing flats that I wore for the 10k during track; they’re virtually weightless while still being supportive for my feet.  I’ll probably wait until race day to decide though, especially considering the nagging heel pain I’ve been having the past couple weeks.
